Hubby's Favorite Tater Salad

Hubby's Favorite Tater Salad

Amounts of all ingredients can be adjusted to taste.

4-5 Med size potatoes
1/4 cup mayonnaise
1/4 cup sour cream
3 hard boiled eggs
3 Tbsp real bacon bits
3-4 green onions (chopped)
Shredded colby jack cheese (optional)

Peel potatoes and cut into 1 inch chunks. Place in pan and cover with water. Boil till soft. Drain water and add remaining ingredients. Stir until you get the consistency you like. Chill.

Sounds good! I've never but cheese and bacon bits in a potato salad and I can't wait to try it! Those are all things I love in a baked potato.

I was making this over the weekend and I remembered that I had omitted the boiled eggs. Rolleyes You can't have potato salad without eggs. Also, I tried a little Tony Chacherie's (sp) in it and it was even better!

Try potatoes cut in three quarter inch cubes and boil til soft but firm so they don't break up.

Mix in homemade mayonnaise and add freshly chopped mint with a tiny dash of paprika.
Eat with cold chicken and cherry tomatoes and loosely chopped lettuce.

I do this a lot.

yumm! A BBQ place near me makes a baked potato casserole that you can serve hot ot cold as a potato salad and it is to die for!
I think it goes something like this: boiled taters, sour cream, bacon bits, chives, hmmm...can't think of what else goes in there but you get the picture. It's delish! Taters are the food of the gods! Smile
